Are Gold Coast theme parks open in early June?

Yes, Gold Coast theme parks are open all year round with a few exceptions. Very occassionally really bad weather will have them closed for a day, but that is really rare.

Other than that theme parks on the Gold Coast are open every day of the year EXCEPT Christmas Day 25 December and Christmas Day on 25 December and on ANZAC Day 25 April there are shorter opening hours with the parks opening around 1:30pm and closing later on that day at 6:00pm. Those times might be subject to change from park to park, but you can easily check that.
